Bei 90 °C denaturiert die Proteinstruktur der Amylase und wird dabei irreversibel geschädigt. Stärke kann nicht mehr abgebaut werden. Die Kühlschrankprobe kann auf Körpertemperatur erwärmt werden, das Enzym wird dann wieder Aktivität zeigen.
